i LOVE hard boiled eggs. they are a great portable snack and go well with breakfast, lunch or dinner!
there are a million and one “no-fail” ways to prepare them, but i’m confident that mine (steaming rather than actually immersing in water) will truly produce the best hard cooked eggs you could imagine with creamy golden yolks and easy to peel shells… mmmmmm!
use any number of your favourite eggs. don’t use fresh eggs, they will cook better if they are closer to their expiry date.


fill a pot with a steamer insert with water and place eggs carefully into the steamer. cover the pot and bring water to a boil. turn the heat down to medium-low and gently boil for 9 minutes.

remove eggs immediately from the pot and transfer to a bowl filled with ice water. keep the bowl in the refrigerator until the eggs are fully cooled, then drain the water.
